The Year of Blue Cheese


A List of 12 Soups I Should Like to Make in ’12:

  • Pear Soup (with Blue Cheese and Bacon)
  • Roasted Tomato Soup
  • Lentil Soup with Sausage
  • Italian Wedding Soup
  • Tortilla Soup
  • Pasta and Peas (aka “Cheech”)
  • Chicken and Dumpling soup
  • French Onion Soup
  • Tuscan White Bean Soup
  • Portuguese Chourizo and Kale Soup
  • Minestrone
  • Cream of Parsnip Soup with Potato Crisps and Bacon

In developing this list, I used two main methods.  One was that I just wrote down names of soups that I have heard of or eaten before.  The other was that I wrote down names of soups whose recipes I specifically have read and want to make.

As for the first soup I listed – Pear Soup (with Blue Cheese and Bacon) – I actually just made and ate it tonight.  I have been having a love affair with pears since this fall, so when I saw a pear soup somewhere I thought, “YES!  THIS IS A GOOD IDEA!”  After years of thinking I disliked it, I have also recently come ’round on blue cheese.  So this recipe combining these two recent loves of mine plus the old standby love, Bacon, was something I had to make immediately, especially given the atmosphere of soup-making and eating that I hope to cultivate in 2012.

This soup was delicious, made all the more so by the inclusion of this “blue cheese” stuff.  I have decided to actively pursue blue cheese in 2012, in addition to making at least one soup a week.  Making soups falls under my 1st Goal for 2012, which is to eat healthier (a start-of-year goal that I have made for the last every year or so of my life, I believe) and cook more.

So, 2012 Goal #1 – off to a a pretty decent start*!

*(not that I am making any claims to bacon or blue cheese being HEALTHY healthy, but they are REAL foods and were in pretty small doses and JUST SO DELICIOUS)
